May’s Hawaii Cold Char Siu Chicken Noodles

Serves 4-6



  • 2lb May's Hawaii Char Siu Chicken (fully cooked/grilled and shredded)
  • 2lb Udon Wheat Flour Noodles
  • 1 cup Seedless Cucumber (julienned)
  • 1-1/2 cup Bean Sprouts
  • 1/2 cup Dry Roasted Peanuts (coarsely chopped)
  • 1/2 cup Green Onion (finely chopped)
  • 1/4 cup Cilantro (chopped)


  • 2 tablespoons Sugar
  • 3 tablespoons Sesame Oil
  • 4 cloves Garlic (finely minced)
  • 1/2 cup Rice Vinegar
  • 1/2 cup Light Soy Sauce
  • 2 tablespoons Chili Oil
  • Salt (to taste)


Step 1
Grill chicken to get a nice char, shred and put to the side.
Step 2
Combine all the ingredients for the sauce, put to the side.
Step 3
Boil noodles, as directed on package. Remove from heat, drain and rinse under cold water.
Step 4
Put noodles in a bowl. Top with shredded chicken, cucumber, bean sprouts, peanuts, scallions & cilantro.
Step 5
Pour sauce over everything and toss together.
