May’s Hawaii Kalua Pork Stuffed Mushrooms

Mom always told me to eat more mushroom.  Too bad her’s never tasted as good as these.  May’s Hawaii Kalua Pork Stuffed Mushrooms are what mom would have made had she known.  These are meaty; these are delicious; these are satisfying; and as you can see here, these are easy to make.  Impress your friends, and impress your mom.  Eat more mushrooms!

May’s Hawaii Kalua Pork Stuff Mushrooms

  • 24oz May's Hawaii Kalua Pork
  • 16 Large White Button Mushrooms
  • .25 cup Olive Oil
  • 6 Green Onions, Sliced
  • 2 cloves Garlic, Minced
  • 5oz Mascapone Cheese or Cream Cheese
  • .5 cup Panko (Japanese Bread Crumbs)
  • .33 cup Parmesan Cheese, Grated
  • 2.5 tablespoons Parsley Leaves, Minced
  • Salt and Peper to taste


Step 1
Preheat the oven to 350 degrees F.
Step 2
Wash the mushrooms thoroughly, and then remove the stems from the mushroom caps. Chop stems finely and set aside. Place the mushroom caps in a shallow bowl and toss with 1/8 cup of olive oil. (Half)
Step 3
Heat the remaining 1/8 cup of olive oil in a medium skillet over medium heat. Add the May’s Hawaii Kalua Pork, Stir and reheat thoroughly. Add the chopped mushroom stems and cook for 3 more minutes. Stir in the chopped green onion and garlic and cook for another 2 to 3 minutes, stirring occasionally. Add the panko bread crumbs, stirring to combine evenly with all the other ingredients. Finally, swirl in the mascarpone and continue cooking until the mascarpone has melted and made the May's Hawaii Kalua Pork mixture creamy. Off the heat, stir in the Parmesan Cheese, Parsley, and season with salt and pepper, to taste, Cool slightly.
Step 4
Fill each mushroom generously with the May's Hawaii Kalua Pork mixture. Arrange the mushrooms in a baking dish or sheet tray, large enough to hold all the mushrooms in a snug single layer. Bake until the stuffing for 30 minutes, until the stuffing is browned on top.
