May’s Hawaii Teriyaki Chicken Summer Rolls

People say, “it is always summer in Hawaii.”  Well, whereas us locals know that there is a winter season when it cools down, we also know there is never an off season for Summer Rolls.  These delicately flavored bundles of joy warm up even the coolest of Hawaii’s winter days.  We invite you to try our May’s Hawaii Teriyaki Chicken Summer Rolls.  We are sure they will warm you as much as they warm us.


May’s Hawaii Teriyaki Chicken Summer Rolls

Ingredients

  • 1lb May's Hawaii Teritaki Chicken (Cooked)
  • 4oz Rice Noodles or Vermicelli
  • 12 Rice Wrappers
  • 1 cup Mung Bean Sprouts
  • 24 Medium Mint Leaves, Fresh
  • 24 Medium Basil Leaves, Fresh
  • 12 Small Cilantro Sprigs
  • 1 Medium Cucumber, Sliced
  • 6 BIB Lettuce Leaves
  • .75 cup Peatnut Butter, Creamy
  • .33 cup Water
  • 3 tablespoons Hoison Sauce
  • 2 tablespoons Lime Juice
  • 4.5 teaspoons Soy Sauce
  • 1 tablespoon Sugar, Granulated
  • 2.25 teaspoons Chili Garlic Paste
  • 1 clove Garlic, Diced
  • .5 teaspoon Sesane Oil, Toasted

Directions

Peanut Sauce
Step 1
Whisk the following ingredients together in a medium bowl; set aside - Peanut Butter, Water, Hoison Sauce, Lime Juice, Soy Sauce, Sugar, Chili-Garlic paste, Garlic Clove, Sesame Oil
Summer Rolls
Step 2
Fill a large bowl with warm water.

Working with 1 sheet of rice paper at a time, immerse paper in the warm water until slightly softened (about 15 seconds). Remove and spread out on a clean surface or cutting board.

Layer on lettuce, noodles, cooked May's Hawaii Teriyaki Chicken, bean sprouts, 2 of the mint leaves, 2 of the basil leaves, 1 sprig of cilantro, cucumber, . Roll up the rice paper halfway into a cylinder shape.

Fold both edges in to tuck while continuing to roll the paper to seal. Place the rolls on a plate covered with a damp towel so they stay moist as you prepare the remaining rolls.

Cut rolls in half and wrap in plastic wrap or place in an air-tight container.
